4 med. gr. onions, 2garlic cloves, chopped, 1 10 oz pkg chopped spinach, thawed and squeezed to drain, 1/2 C. lowfat small curd cottage cheese, 1/2 C. Heart healthy Bisquick, 1 C. light soymilk,1 tsp. lemon juice, 1/4 tsp pepper, 3 eggs, 3 Tbsp. shredded parmesan cheese, 1/4 tsp nutmeg

Recipe Ingredients for Spinach-Parmesan Pie

1 cup Spinach
2 clove Garlic
3 large egg Eggland's Best Egg
4 serving Green Onions
0.5 cup (not packed) Cottage Cheese, Lowfat, 1% Milkfat
16 fl oz Light Original Soymilk
0.25 tsp Pepper, Black
3 tbsp Parmesan, Shredded Cheese
0.25 tbsp Lemon Juice, Canned Or Bottled
1/4 tsp Nutmeg

Recipe Directions for Spinach-Parmesan Pie

Heat oven to 350. Grease 9 inch pie plate. Cook onions and garlic over medium heat with olive oil until tender.Stir in thawed, drained spinach, spread mixture in pie plate and spread cottage cheese on top. Stir in Bisquick, milk,lemon juice, eggs until blended. Pour into pie plate, sprinkle with Parmesan cheese and nutmeg. Bake in 350 oven 35 minutes or until knife inserted in center comes out clean. Cool 5-10 minutes and serve. each serving is 165 calories, 9g fat,115mg cholesteral, 370mg sodium, carbs12g 62% vit A, 6% vit C, 18% Calcium 6%Iron, based on 2,000 calorie diet.
