Recipe Ingredients for Spinach and Orzo Soup with Turkey Parmesan Meatballs

1 egg
2 tbsp water
1/4 cup breadcrumbs
12 oz lean ground turkey
1/4 cup grated Parmesan cheese
2 tbsp fresh parsley
3 garlic cloves, minced
1/2 tsp salt
1/4 tsp pepper
3 tablespoons chicken base
8 cups water
4 oz mushrooms, sliced
1 cup carrots, sliced
3/4 cup orzo, uncooked
4 cups frozen spinach, coarsely chopped

Recipe Directions for Spinach and Orzo Soup with Turkey Parmesan Meatballs

  1. Whisk egg and water together. Mix in breadcrumbs and allow to sit for five minutes. Add turkey, cheese, parsley, garlic, salt and pepper.

  2. With wet hands, for 1-1/4" meatballs. Chill for a half hour.

  3. Bring broth to a boil. Add orzo and carrots and simmer over medium heat for eight minutes. Add meatballs and simmer for another ten minutes. Add spinach and simmer until meatballs, orzo, and spinach are tender.

  4. Season soup with salt and pepper. Ladel into bowls and serve.
