Simpler lasagna. My FH doesn't like mushrooms so I saute them seperately and place them under the mozzarella cheese on the top. I think there is enough salt in all the cheese but salt and pepper to taste.

Recipe Ingredients for Spinach, Onion, Pepper, Mushroom Lasagna Bake

3 servings whole grain penne
10 oz frozen spinach, thawed and pressed
2 cups mushrooms, chopped
1 white onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 T olive oil
2 cups reduced fat mozzarella cheese
1 cup 1% cottage cheese
4 oz Dannon Nonfat Plain Yogurt
1 t oregano
1 t basil
14 1/2 oz Hunt's Diced Tomatoes with Basil Garlic and Oregano NSA
14 1/2 oz Hunt's Fire Roasted Tomatoes with Garlic
8 oz Hunt's NSA sauce
1/2 t pepper
1 carrot, grated

Recipe Directions for Spinach, Onion, Pepper, Mushroom Lasagna Bake

  1. Preheat oven to 350 degrees.

  2. Cook pasta according to package.

  3. Saute onion, mushroom and peppers in olive oil.

  4. Mix cottage cheese, yogurt, basil and oregano (or italian spice) together.

  5. Drain both cans of tomatoes and blend one and a half cans of tomato. Add this to the rest of the tomatoes, carrot and sauce.

  6. Assemble. Sauce, noodles, spinach, cottage cheese and yogurt, onion and peppers, mushrooms, mozzarella and repeat.

  7. Bake at 350 degrees for 30 minutes. Broil the last 5 minutes, if desired.

  8. Note: This will be messy but that just allows more freedom in the layering process. Actually you don't even need to layer this. . .
