Recipe Ingredients for Spinach Omlette

1 egg
1/3 cup egg whites
2 cups baby spinach
1/3 cup baby bella mushrooms
1/3 cup potato
1/3 cup shredded cheddar cheese
1 teaspoon olive oil
1 clove garlic

Recipe Directions for Spinach Omlette

  1. Mix egg and egg whites in a bowl, put to side

  2. place oil in pan and heat up over med heat

  3. add chopped garlic, let warm up a bit

  4. add chopped potato, be sure to chop potato very small

  5. let cook until potato appears cooked through

  6. add mushrooms and spinach, toss until spinach is wilted and covered in oil

  7. add egg mixture and half the cheese

  8. let cook a few minutes, until egg is 75% cooked

  9. flip egg and add the last of the cheese, cook until all the cheese has melted
