Spinach omlette - mostly egg white

Recipe Ingredients for Spinach Omlette (mostly egg white)

2 cup Spinach
2 large Egg, Whole
8 oz 100% Liquid Egg Whites
1/2 cup pieces Mushrooms
1 tbsp Pecorino Romano Grating Cheese
1 tbsp extra virgin olive oil

Recipe Directions for Spinach Omlette (mostly egg white)

  1. Heat non stick pan - medium heat

  2. Use one bag of fresh, cleaned spinach. Place in pan. lightly salt, and spray with a fine mist of olive oil.

  3. About 3/4 cup of fresh raw mushroom with spinach.

  4. Saute until spinach shrinks. (Note - mushrooms will absorb some of the water released from the spinach - thats OK)

  5. Once the mushrooms are brown and the spinach has shrunk, remove any water collected in the pan

  6. Break one whole egg in a small bowl, and mix. Pour the egg over the spinach / mushroom.

  7. Top off the mixture with 3/4 cup of egg white.

  8. Lightly lif the edges as the omlette is cooking so it wont wtick when you fold over.

  9. (Optional) - after the egg cooks for a minute or so sprinkle about one tablespoon of grated parmesian for flavor.

  10. When the edges lift clean, fold the omlette in half. Let cook until it sticks together.

  11. At this point, it helps to split the omlette (which should look like a semi-circle at this point) into two even pieces.

  12. Flip each piece over, and allow to cook for a minute or so

  13. Check the center to be certain the egg is fully cooked. Sprinkle some black pepper on top.

  14. Plate and serve hot
