2 cups egg substitute
2 slices swiss cheese
1 cup spinach
1/2 cup sliced mushrooms
1/4 cup diced onions

Recipe Directions for Spinach Omelette

  1. cook egg substitute in skillet over medium heat until slightly firm

  2. add vegetables and 1 slice cheese

  3. roll or fold and add other slice of cheese over top

  4. cover and lower heat to simmer until firm and cheese is melted
