The first few times I made this it was quite time consuming, but the more you make it, the quicker it becomes. Also you can consider making and refrigerating your filling the night before to make this a quick weekday dinner. (Add an extra 10 - 15 minutes in the over)

Recipe Ingredients for Spinach and Musroom Stuffed Itallian Shells

5 pieces Jumbo Shells
16 oz Ground Beef
226 grams Mozzarella, Part Skim Milk, Low Moisture Cheese
56 grams Shredded Parm Cheese
2 large Egg, Whole
1 cup Spinach
1.5 cup Cottage Cheese Small Curd Grade A Pasteurized Dairy
15 oz Part Skim Milk Ricotta Cheese
14 oz Robusto! Pasta Sauce
1.5 cup, pieces or slices Mushrooms

Recipe Directions for Spinach and Musroom Stuffed Itallian Shells

  1. Preheat over to 400

  2. Boil shells per box directions to al dente

  3. Brown ground beef to just done. Drain and cool to room temp

  4. Beat the two eggs

  5. Mix all cheese together and add DRAINED frozen spinach

  6. Add eggs

  7. Add mushroom and mix well

  8. Spoon mix into cooked shells

  9. Place in baking dish.

  10. Top evenly with tomato sauce

  11. Sprinkle with any left over mozzarella

  12. Bake for approx 15-20 on 400 or until heated through and cheese is melted.
