Sweet onions and garlic sauted with spinach and mushrooms flavored with egg and garnished with greek yogurt.

Recipe Ingredients for Spinach Mushrooms n Eggs

1 tablespoon olive oil
1/2 cup onion
1 tablespoon chopped garlic
1 cup mushrooms
2 cups baby spinach
1 egg
1 egg white
1/4 cup plain yogurt

Recipe Directions for Spinach Mushrooms n Eggs

  1. Wilt onions and garlic in olive oil

  2. Add mushrooms. Add small amount of water to steam/cook if desired. Cook unitl soft.

  3. Add Spinach. Cook until wilted.

  4. Scramble egg and egg white and add to pan

  5. Cook until set. Season with pepper as desired.

  6. Serve with garnish of greek yogurt
