Recipe Ingredients for spinach,mushrooms, Italian sausage lasagna

2 tsp olive oil
1 medium onion, chopped
6 fresh mushrooms, sliced
2 cups tomatoes, stewed
1 1/2 tbsp. chopped parsley
1/2 tsp. basil leaves, crushed
3/8 tsp. ground oregano
3/8 tsp. Italian seasoning
1 clove garlic, chopped
12 oz. tomato paste
1 bunch fresh spinach
8 oz. lasagna noodles
1/2 tbsp. olive oil
3/4 lbs. mild italian sausage
8 oz. mozzarella cheese
1 1/2 cup low fat cottage cheese, 2%
4 oz. parmesan cheese
10 oz lasagna noodles
8 oz spinach

Recipe Directions for spinach,mushrooms, Italian sausage lasagna

  1. Make sauce first.

  2. Saute onions in oil in a medium saucepan, adding garlic and mushrooms when onions are a little soft.

  3. Brown and drain sausage in a separate pan, either break apart into chunks or slice in chunks (if links), add browned sausage to sauce.

  4. While sauteing clean and steam spinach, (remove and discard stems)

  5. To sauce add following: tomatoes, tomato paste, parsley, basil, seasoning and oregano. Bring sauce to boil and then simmer, uncovered, stirring occasionally.

  6. When spinach is tender, remove and set aside.

  7. Add more water to pot and bring to a boil, add oil and pasta. Boil pasta for 10 minutes or until tender.

  8. Grate mozzarella cheese and assemble all recipe parts on counter. Drain pasta, rinse and remove sauce from heat.

  9. In a 9 x 12 inch baking pan put 1/4 sauce and begin layering ingredients, ending with sauce and then sprinkle parmesan cheese on top.

  10. bake in 350 degree oven for about 20 minutes until bubbly, serve hot.
