Vegan veggie and red wine sauce with beans for pasta, rice or quinoa.

Recipe Ingredients for Spinach, mushroom and tomato pasta sauce

1 tbsp chopped onion
1 cup canned Italian tomatoes
1 tbsp red wine
1 tbsp soy milk
1 large mushrooms
1 red pepper, chopped
1 cup spinach
1 baby carrots
1 tbsp fresh basil
1 tbsp kidney beans
1 tbsp black beans

Recipe Directions for Spinach, mushroom and tomato pasta sauce

  1. Water saute onion and remaining vegetables for five minutes; add soy milk and let it bubble away (two minutes or so). Add red wine and let it bubble away (about two minutes). Add tomatoes, basil and beans; simmer for two hours on low heat. Serve with whole wheat pasta and fresh basil. Also works with rice and quinoa.
