While this is not the lowest fat quiche ever, it is yummy and a good compromise. I use shitake mushrooms for more flavor and texture.

Recipe Ingredients for Spinach, mushroom, tomato low fat quiche

1 cup eggs
1 cup egg whites
1 cup ligh vanilla soymilk,
3 cups spinach, cooked, chopped
1 cup Reduced Fat 4 Cheese Mexican Shredded Cheese,
1 cup sliced mushrooms
1/2 cup cherry tomatoes, sliced
1 small red onion, chopped

Recipe Directions for Spinach, mushroom, tomato low fat quiche

  1. steam, drain, and chop spinach

  2. chop mushrooms, tomatoes, onions

  3. beat eggs, soymilk, egg whites

  4. mix all ingredients

  5. bake at 350 for about an hour
