2 tomatoes
4 c mushrooms, raw
1 onion
2 cloves garlic
1 tbsp olive oil

  1. saute onion, garlic and mushrooms until soft

  2. add spinach & diced tomatoes

  3. place on top of multigrain toast and top with poached egg
