Recipe Ingredients for Spinach, Mushroom, Sausage Frittata

1/2 pound sausage
3/4 cup mushrooms, chopped
1/2 cup onion, sautéed
10 ounce frozen chopped spinach, thawed and squeezed thoroughly to remove liquid
4 eggs
1 cup ricotta cheese
3/4 cup mozzarella cheese, grated
1/4 teaspoon basil
1/4 teaspoon oregano
1 teaspoon garlic
1/8 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Spinach, Mushroom, Sausage Frittata

  1. Preheat oven to 375 degrees.

  2. In a medium skillet on medium heat, brown sausage. Drain and set sausage aside to cool.

  3. In the same skillet in the leftover sausage grease, sauté mushrooms and onions until onions are clear with a slight crunch. Set aside and let cool.

  4. In a large bowl, whisk together all ingredients until well mixed. Spray a 9-inch pie plate with cooking spray and fill with the spinach mixture.

  5. Bake for 30 minutes, or until browned and set. Let cool for 20 minutes, cut in wedges and serve.

  6. If you freeze it for later, reheat at 300 degrees for 10 minutes.
