Steamed spinach and mushrooms with a puree of mushroom sauce

Recipe Ingredients for Spinach and Mushroom Sauce

2 lbs spinach
1 lb mushrooms
1/2 cup soymilk
1 onion
1/2 tsp. garlic powder
2 tbsp. whole wheat flour

Recipe Directions for Spinach and Mushroom Sauce

  1. steam spinach and 1/2 mushrooms

  2. cook down remaining ingredients until most of the water is out of mushrooms. Add flour and garlic powder after about 10 minutes to avoid burning them onto pot early on as soy milk will evaporate rapidly. Feel free to add water or additional soymilk in the beginning as needed. After cooking puree and serve over spinach/mushroom portions.

  3. A nice mild flavor. Warning: some poeple won't like the texture of the steamed spinach or the color/consistency of the sauce.
