This recipe is enough to make 2 pies (quiches). The serving size is for 1 full pie, but I could barely finish 1/2 w/salad...(150 cal meal!!)

Recipe Ingredients for Spinach and mushroom quiche

1 cup nonfat cottage cheese
1 small onion
16 oz frozen spinach
2 eggs
8 oz mushrooms - no salt

Recipe Directions for Spinach and mushroom quiche

  1. Sautee the onion, pre-cooked spinach and mushrooms.

  2. Season to taste. Mix in cottage and eggs. Add seasoning if necessary.

  3. Pour into 2 pans and cook at 325.
