Used Pillsbury Ready-Made crust (not included in analysis)

Recipe Ingredients for Spinach and Mushroom Quiche

4 large eggs
1/2 cup part-skim ricotta cheese
1 small onion, chopped
3 ounces baby bella mushrooms, chopped
1/2 cup gruyere cheese, shredded
1/2 cup parmesan cheese, shredded
10 ounces baby spinach
2 cloves garlic
1/4 teaspoon nutmeg

Recipe Directions for Spinach and Mushroom Quiche

  1. Saute onion, garlic and mushrooms over medium high heat. Add spinach, saute until wilted and cool slightly.

  2. In separate bowl, whisk together eggs, ricotta cheese, nutmeg and pinch of salt and pepper.

  3. Layer bottom of ready-made pie crust with gruyere and parmesan cheeses. Add spinach mix on top of cheeses, then pour egg mixture over it.

  4. Bake at 375* for 40 minutes or until eggs have set.
