Store bought crust, Veggies on hand and dairy on hand.

Recipe Ingredients for Spinach and Mushroom Quiche

1 Pillsbury Pie Crust
2 tbsp olive oil
1 Salt, pepper, seasoning
2 eggs
1/3 cup Liquid Egg whites
4 cups baby spinach
1 1/2 cups of sliced Portabella mushrooms
3/4 cup diced Onions
3 cups whole milk
7 1/2 oz Extra firm Tofu
4 oz Provolone Cheese

Recipe Directions for Spinach and Mushroom Quiche

  1. Prepare Crust as per directions

  2. Cook spinach and mushrooms with desired spices

  3. Place veggies in bottom of crust.

  4. Blend eggs, egg whites, tofu, and half & half until smooth.

  5. Pour over veggies.

  6. Top with Cheese

  7. bake at 375 for 45 minutes or until eggs are solid .

  8. Serves 4 adults.
