Spinach & Mushroom Quiche Recipe

Pre-heat oven to 350 F. Mix thoroughly scallions, spinach, drained mushrooms (small can size), and gruyere (can substitute swiss cheese if preferred). Place inside the THAWED pie crust. Beat together eggs and cream. Add pinches of salt and pepper if desired. Drizzle egg/cream mixture over quiche filling. Dust lightly w/ nutmeg if desired. Bake for 25-30 minutes until quiche is cooked through (check by inserting a knife) and the crust has reached your desired crustiness. Let cool before slicing. Serve warm.

4 large eggs
1/3 c. half and half
21 g scallions
125 g spinach
143 g canned mushrooms, drained
76 g gruyere
