A delicious and simple pasta recipe that I made up. It's a little high in cholesterol (you can drop the sausage if you wish) but high in vitamin A, C and Iron. Prep time: 15-20 minutes Cook time: about an hour.

Recipe Ingredients for Spinach & Mushroom Penne w/sausages

1/2 lb mushrooms
10 oz spinach
1 medium onion
1 lb hot italian sausage
2 garlic cloves
3 tbsp olive oil
1 tbsp unsalted butter
1 tbsp red pepper flakes
1 lb penne pasta

Recipe Directions for Spinach & Mushroom Penne w/sausages

  1. Chop spinach. Slice mushrooms into 1/2 inch pieces. Slice onion thinly.

  2. Pour 1 tbsp. olive oil into a 5 qt stockpot on medium heat. Cut garlic into thin slices and add to the oil. Heat on medium low until the garlic starts to change in color. Add chopped spinach, cover the pan and cook over high heat until steam appears. Reduce heat and simmer until tender (about 3 minutes.) Remove and place in a mixing bowl.

  3. Turn heat back up to medium high. Place butter into stockpot with 1 tbsp. olive oil and melt. Add the mushrooms and shake the pan so mushrooms are coated with butter and oil. Add second garlic clove. Cook over medium high heat uncovered, shaking the pan frequently. At first mushrooms will absorb the fat. Continue to shake the pan heating mushrooms until they turn brown and release their juice. Remove and place in mixing bowl with spinach.

  4. Meanwhile, fill 5 quart pasta pot with water and place on high heat. It will take some time before it is boiling and ready for the pasta.

  5. Sautee the onions in the crockpot with 1 tbsp olive oil (about 10 minutes) over medium heat. Remove when they turn soft and place in mixing bowl with the spinach and mushrooms.

  6. Pour 1/4 cup water in crockpot and cook sausage over medium heat, turning frequently until browned (about 15 minutes.) Remove from pan and place on cutting board to cool.

  7. When the water in the pasta pot is boiling, add about a tablespoon of olive oil and salt to the water and cook penne pasta according to the directions on the package. Remove pasta (saving water), rinse with cool water and set aside.

  8. Cut sausage into 1/2 inch slices.

  9. Take 1 1/2 cups water from the pasta and deglaze crockpot over medium heat stirring in all of the browned bits. Scoop spinach, mushrooms, onions and sausage back into crockpot and add pepper flakes. Turn heat to high until boiling, then simmer until sauce thickens. Add pasta and mix well.

  10. Serve with grated cheese if desired.
