Spinach & Mushroom Pasta Recipe

You can use any type of pasta you like.

Recipe Ingredients for Spinach & Mushroom Pasta

1 pound spaghetti
4 cups spinach, chopped
8 oz mushrooms, sliced
1/2 medium onion
2 cloves garlic
2 tbsp olive oil, divided

Recipe Directions for Spinach & Mushroom Pasta

  1. Cook pasta according to package directions. Reserve about a cup of cooking water.

  2. In a large skillet over medium heat, add 1/2 tbsp of olive oil to pan. Add onions, and sauté till translucent. Add garlic, cook one minute more, or until you can smell the garlic. Remove to a plate, making certain to remove all garlic so it doesn't burn and become bitter.

  3. Turn heat up to high; add another 1/2 tbsp of olive oil and mushrooms. Do not stir of 4-5 minutes, or until mushrooms are browned. Toss to brown other side of mushrooms. This should take about 10 minutes, total.

  4. Add onion and garlic back to the pan. Reduce heat to medium. Add the spinach and the rest of the olive oil. Cover pan, stirring once in awhile till spinach is wilted. Do not allow liquids to evaporate.

  5. Toss with pasta, adding cooking water as needed to keep pasta from sticking together. Serve.
