Recipe Ingredients for Spinach & Mushroom Pasta Bake

12 ounces Ronzoni Healthy Harvest Whole Wheat Penne Rigate Pasta
1 tsp olive oil
3 cloves garlic, minced
1 onion, chopped
1 tablespoon fresh thyme
1 lb mushrooms, sliced
1 fresh ground pepper
2 tablespoons all-purpose flour
2 cups skim milk
2 cups baby spinach
2 cups part-skim mozzarella cheese, grated

Recipe Directions for Spinach & Mushroom Pasta Bake

  1. Cook pasta according to package directions.

  2. Heat olive oil in a large skillet. Add garlic & onion and cook for 3-4 minutes.

  3. Add mushrooms, thyme & pepper (to taste) and cook until the mushrooms have released their liquid.

  4. Sprinkle flour and stir well to incorporate it evenly.

  5. Add milk, stirring continuously, and cook until mixture thickens. Remove from heat.

  6. Add the cooked pasta and stir to combine.

  7. Add spinach and stir until it is evenly distributed.

  8. Pour in a casserole & top with the mozzarella cheese.

  9. Place under the broiler until cheese is bubbly.
