I love this omelet. It's almost like a quiche with the spinach, mushrooms, and onions together. To reduce the sodium to almost nothing, leave out the cheese.

Recipe Ingredients for Spinach, Mushroom, Onion Omelet

1/2 cup Egg Beaters
2 small mushrooms - sliced
1/2 cup onion - diced
1/2 cup raw spinach
1 ounce cup Fat-Free Cheddar Cheese
1 Canola Cooking Spray

Recipe Directions for Spinach, Mushroom, Onion Omelet

  1. Caramelize the onions in the skillet using the canola cooking spray.

  2. Add the mushrooms and cook until slightly brown.

  3. Add the spinach leaves and cook until wilted.

  4. Pour in 1/2 cup of Egg Beaters.

  5. When underside is cooked, flip omelet and add cheese to top.

  6. Fold.

  7. Flip to let other side cook.

  8. Serve and Enjoy.
