Recipe Ingredients for Spinach, Mushroom, Onion Fritatta

1 cup spinach
1/4 cup red onion
1/3 cup mushrooms
1 tbs. butter
3 eggs
1/2 cup egg beater
1/8 cup swiss cheese

Recipe Directions for Spinach, Mushroom, Onion Fritatta

  1. Preheat oven to 350 degrees

  2. cut up onions and mushrooms

  3. saute in butter

  4. add spinach at the end

  5. stir until just wilted

  6. Spray cooking spray in oven safe skilled or quiche dish.

  7. Pour egg and egg beater mixture into prepared dish, stir in vegetables and add swiss cheese.

  8. Bake for approx. 15 min or to desired degree of firmness.
