Low Cholesterol Spinach and Mushroom Omelet

Recipe Ingredients for Spinach and Mushroom Omelet

1 serving Egg, Whole
3 large Egg, White
2 cup Spinach
3 medium Mushrooms
4 tbsp chopped Onions
1 oz Milk, Reduced Fat, Fluid, 2% Milkfat
1 1tsp Olive Oil

Recipe Directions for Spinach and Mushroom Omelet

  1. Chop onion and mushroom to desired size. Sauté onion and mushroom in a skillet with a little oil until tender; add the spinach and toss until the spinach has wilted; about 30 seconds. Take contents of the skillet and set aside on paper towel to drain.

  2. Take four eggs and separate the yokes from three of the eggs and save for some other recipe. Alternately, you could use egg whites from a carton. Whisk eggs with about a tablespoon of milk to make fluffily.

  3. Reheat skillet with remaining oil; when skillet is hot, add the eggs. Then place the drained spinach, onion, and mushroom mixture in the egg. Let egg cook until it is firm enough to fold. Fold in half and continue to cook on one side until slightly brown. Flip omelet on other side and brown that side as well.

  4. Serve immediately.
