Recipe Ingredients for Spinach Mushroom Lasagna

2 cups mushrooms, sliced
1 cup onions, diced
1 tbs. lowfat margarine
42 ounces stewed tomatoes
2 tsp. pesto
3 1/2 ounces whole wheat pasta
6 cups spinach, fresh
1 cup mozzarella, shredded
1/2 cup reduced fat ricotta cheese
1 cup lowfat cottage cheese
1/4 cup parmesan cheese, shredded

Recipe Directions for Spinach Mushroom Lasagna

  1. Preheat oven to 350 degrees.

  2. Cook whole wheat lasagna noodles (I used 4 of them, then cut them in half) in boiling water until only half-way cooked. Cover with cool water and set aside.

  3. Melt margarine in skillet. Add onions and cook for five minutes. Add mushrooms and cook for 5 more minutes. Add stewed tomatoes (I use the kind with Italian seasoning already in the can) and pesto. Bring to a boil, lower heat and let simmer for 20 - 30 minutes.

  4. Spray a skillet with cooking spray; heat spinach until just wilted.

  5. Layer 9X9 baking dish with sauce, then 2 noodles, more sauce, then 1 cup mozzarella, then spinach. Add two more noodles, sauce, ricotta and spinach. Add two more noodles, sauce, parmesan and spinach. Add last two noodles, remaining sauce and top with last 1 cup mozzarella.

  6. Bake covered for 1 hour at 350. Remove cover and back an additional 30 minutes.
