This is a lovely breakfast frittata that is easy and fairly quick

Recipe Ingredients for Spinach Mushroom Frittata

8 large Egg, Whole
1 tbsp Extra Virgin Olive Oil
4 tbsp chopped Onions
0.25 cup, chopped Peppers, Sweet, Red
2 ounce Mushrooms, Portabella
1.5 cup Spinach
6 tsp Classic Dijon Mustard
0.5 cup Milk, Reduced Fat, Fluid, 2% Milkfat
0.5 tsp Sauce, Ready-to-serve, Pepper, Tabasco

Recipe Directions for Spinach Mushroom Frittata

  1. Chop onions, peppers, mushrooms and spinach. Heat oil in an oven safe pan and saute onions and peppers for 3 minutes. Add mushrooms and spinach and saute for 3 additional minutes.

  2. Whip together the 8 whole eggs, milk, ,mustard and hot sauce with salt and pepper as desired. Pour egg mixture into the saute pan and bake at 350 degrees for 15 minutes or until the egg in the middle is done.
