Recipe Ingredients for Spinach & Mushroom Frittata

1 tsp oil
3 cloves garlic, minced
1/2 cup onion, sliced
1 cup mushrooms, sliced
4 cups fresh spinach, chopped
5 eggs
1/4 teaspoon salt
1 dash pepper
1/4 cup mild cheddar cheese
1/4 cup skimmed milk
2 spring onions

Recipe Directions for Spinach & Mushroom Frittata

  1. Mince garlic, dice onions, slice mushrooms and fry until onions are translucent.

  2. Add spinach until wilted, put aside in a bowl to cool.

  3. Whisk eggs,milk,cheese, spring onions and any pepper/herbs you want.

  4. Mix together spinach and egg mix. Pour into HOT frypan.

  5. Turn down frypan and gently lift, pull and tilt the egg mix to get the runny mixture cooking.

  6. Once the bottom is cooking, finish the top under the grill in your oven.

  7. Serve with Salad.
