Healthy and quick - 30 minutes to make. Replace part (or all) of tomato sauce with salsa and/or add diced jalapeno into the filling for heat.

Recipe Ingredients for Spinach Mushroom Enchiladas

1 small onion, diced
2 garlic cloves, minced
12 ounces mushrooms, sliced
1 pound spinach, baby
1 1/4 cup cream of mushroom soup
252 grams corn tortillas
2 cups salsa or 2 cups Newman's Own Marinara
1/2 cup cheese, mexican

Recipe Directions for Spinach Mushroom Enchiladas

  1. Saute onion in non-stick pan until translucent. Add garlic clove and cook 1 minute. Add mushrooms and cook until starting to release water. Roughly chop spinach and add several handfuls at a time until it is all wilted. Stir in cream of mushroom soup. Cook spinach mixture until it is reduced to a creamy texture.

  2. Spread 1/2 cup marinara sauce on bottom of pan. Fill each tortilla with about 2 tbsp of spinach mixture. Fold and put in pan, folded side down. Pour rest of marinara over enchiladas. Sprinkle cheese evenly on top.

  3. Bake in 350 F oven or until warmed through and cheese is melted.
