Tasty scrambled eggs with spinach and mushrooms, covered with mozzarella cheese. This recipe provides a good source of protein and good fats. Serve with a side of toast to make a complete meal.

Recipe Ingredients for Spinach & Mushroom Eggs

1/4 cup spinach
1/4 cup mushrooms
2 eggs
1 tbs butter
1 tbs cream
1/2 clove garlic
1/8 cup mozzarella cheese
1/4 tsp pepper

Recipe Directions for Spinach & Mushroom Eggs

  1. add a little bit of water to a pan and cook spinach until soft and tender. Remove spinach and drain. Chopped spinach and reserve.

  2. Clean water out of pan and melt butter. Add chopped mushrooms and garlic and saute until garlic is browned and mushrooms are tender. Remove from pan and reserve.

  3. Mix eggs, cream, pepper, reserves spinach and mushrooms.

  4. clean pan and grease pan.

  5. place egg mixture in pan and cook until firm.

  6. add cheese to top until melted and serve.
