Great healthy breakfast for 2. I use Brummel and Brown Yogurt butter (that is the spread)

Recipe Ingredients for Spinach and Mushroom Egg White Omelet

2 muffin Hearty Grains English Muffins
3 Tbsp Spread
1.5 serving Cream Cheese Light
1.5 tbsp Parmesan, Grated Cheese
8 large Egg, White
1/2 cup Mushrooms Sliced
2 cup Spinach
1 tbsp Chives, Freeze-dried
1 tbsp Parsley, Dried
1 tsp Pepper, Black
0.5 tsp Sea Salt

Recipe Directions for Spinach and Mushroom Egg White Omelet

  1. Warm pan on stove over medium heat.

  2. Add 1 Tsb of butter/spread to pan, allow to melt and throw in raw spinach and mushrooms.

  3. While the mushrooms and spinach are cooking whisk the egg whites (8) with salt to taste until light and fluffy.

  4. Pour eggs over spinach and mushroom mixture when spinach is wilted.

  5. Continue to shake and move pan for a while to keep the egg whites moving until you see white curds form.

  6. Allow to cook until about finished and flip to create a half moon.

  7. Seal the edges of the omelet and sprinkle with Parmesan cheese, parsley, chives, black pepper and a tad of salt.

  8. Toast your English muffins, Put a light layer of yogurt butter on top and light cream cheese on top of the butter layer.
