This amount of ingredients fits into a stoneware pie pan 11 inches across by 1 1/4 inches deep. Mine took about 1 1/2 hours to bake but may take less in a pyrex dish. Put a foil lined pan below your dish in the oven to catch any drips during cooking. No need to add salt to recipe as the cheeses are very salty. Choose lower fat cheeses 7-8 grams of fat per ounce.

Recipe Ingredients for Spinach Mushroom Crustless Quiche

2 lb fresh spinach
1 lb fresh cremini mushrooms
2 t olive oil
4 pieces (halves) dried tomatoes
1 1/2 c fat free milk
4 eggs
1/2 t black pepper
1/8 t nutmeg
1/8 t cayenne pepper
6 oz edam cheese, grated
4 oz smoked mozarella, grated
2 oz grated romano cheese

Recipe Directions for Spinach Mushroom Crustless Quiche

  1. Preheat oven to 350 degrees.

  2. Wipe thin layer of olive oil in pan with paper towel.

  3. Wash and roughly chop spinach. Put into deep stock pot or other large, nonreactive pot along with a splash of water and cook until spinach just wilts. Drain well in colander then squeeze excess water out with paper towels--get as dry as possible.

  4. Wash and slice mushrooms on the thin side. Saute in 2 t olive oil, in two batches if necessary, until liquid is rendered and evaporated and mushrooms begin to brown.

  5. Rinse dried tomato halves if packed in oil or rehydrate according to package directions if dried. Chop fine.

  6. In large bowl, whisk the eggs, add milk and seasonings, add grated edam and mozarella and mix well. Add spinach, mushrooms and tomato and mix well. Pour into pie pan and top with grated romano cheese.

  7. Bake at 350 for 1 hour or more. Quiche is done when knife inserted in center comes out fairly clean. Let sit about 10 minutes, slice and serve.
