Recipe Ingredients for spinach and mushroom couscous

1 cup couscous
47 grams diced onion
2 cloves garlic
53 grams red pepper diced
145 grams spinach
78 grams mushrooms sliced
8 grams fresh dill
1 tsp lemon zest
2 tbsp lemon juice
1 tbs chicken bouillon
2 1/2 cups chicken broth

Recipe Directions for spinach and mushroom couscous

  1. In a saucepan add 1/4 cup of broth diced onion, garlic and red peppers let veggies soften about 2 minutes.

  2. Add mushrooms and chopped spinash till spinach wilts, add broth bring to a boil. Add couscous, lemon zest, dill and lemon juice. Stir, turn off stove, cover for 10 min. Stie with a fork add groung pepper to taste.
