Recipe Ingredients for spinach, mushroom & cheddar omelet

2 eggs
1 oz spinach
1 mushroom
1 oz cheddar
2 tsp smart balance

Recipe Directions for spinach, mushroom & cheddar omelet

  1. In one pan saute mushroom with spinach.

  2. In another pan, melt the smart balance then cook beaten eggs until set.

  3. Turn over if desired.

  4. Put sauted goods in and fold the eggs over.

  5. Cook until cheese is melted.
