Omelet with sauteed mushrooms, baby spinach & shredded cheddar cheese.

Recipe Ingredients for Spinach-Mushroom-Cheddar Omelet

2 eggs, large
2 egg yolks
1 oz. cheddar cheese
1/2 cup mushrooms, sliced
1 cup spinach, baby
1 tbsp. butter, unsalted
1/8 tsp. salt

Recipe Directions for Spinach-Mushroom-Cheddar Omelet

  1. Melt half the butter in a pan. Add mushrooms 7 saute until lightly browned. Reserve.

  2. Beat eggs with salt & pepper to taste. Melt rest of butter in pan until hot. Add eggs and cook until almost done.

  3. Flip. Add mushrooms, cheddar & spinach.

  4. Fold sides over center. Cover & turn heat to low. Let cook until spinach wilts & cheddar melts.

  5. Serve & eat.
