An easy and nutritious casserole.

Recipe Ingredients for Spinach and Mushroom Casserole

12 oz fresh spinach
1 lb mushrooms, sliced
1 onion, chopped
2 tbs olive oil
6 oz parmesan cheese, shredded

Recipe Directions for Spinach and Mushroom Casserole

  1. Sauté mushrooms and onion in olive oil until mushrooms are tender and onions are translucent (about 10 min).

  2. While mushrooms and onion are cooking, cover spinach with water in large pot and cook on high, until wilted.

  3. Drain spinach and press out excess water.

  4. Line bottom of 7 ˝ x 11" casserole dish with half of spinach; layer with one third of cheese, all of mushrooms and onions, remaining spinach, and remaining cheese. Bake at 350° for 25 minutes.
