Fast and easy for Breakfast or Brunch

Recipe Ingredients for Spinach Mushroom and Canadian Bacon Fritata

2 tsp olive oil
2 cups Mushrooms
6 cups raw spinach
2 servings Canadian Bacon
2 eggs
2 egg whites
4 tbsp fat free half and half
2 ounces reduced fat cheddar cheese

Recipe Directions for Spinach Mushroom and Canadian Bacon Fritata

  1. In a large saute pan, cook sliced mushrooms in olive oil until golden.

  2. Add diced canadian style bacon and heat through.

  3. Add the spinach and cook until wilted.

  4. In a bowl beat eggs, egg whites, half and half and cheese.

  5. Season with salt and pepper.

  6. Pour over cooked vegetables in saute pan.

  7. Gently shake pan to distribute liquid evenly, let cook over flame for two minutes.

  8. Transfer to a preheated broiler and brown the top for another two minutes.
