Tasty, heavy casserole. Vegetarian but not Lacto!

Recipe Ingredients for Spinach, Mushroom and Artichoke Casserole

2 tbsp Butter
1 medium Yellow Onions
2 tsp Garlic
16 ounce Mushrooms, Portabella
20 oz Spinach
2 Can Artichoke
15 oz Ricotta, Part Skim Milk Cheese
4 oz Reduced Fat Feta Traditional Chunk
6 large Egg, Whole
0.5 cup, shredded Cheddar Cheese

Recipe Directions for Spinach, Mushroom and Artichoke Casserole

  1. Preheat over to 350 F

  2. Melt butter and saute onions

  3. Add garlic and mushrooms & cook for 5 minutes

  4. In a large bowl combine spinach, artichoke hears, musroom mix , ricotta, cheddar and feta.

  5. Toss to combine

  6. In another bowl beat the eggs, salt and pepper and add to the spinach mix.

  7. Add bread crumbs and mix well

  8. Transfer to the prepared dish and top with layer of Parmesan

  9. Bake until the casserole is firm and top is golden - 40-45 minutes
