Recipe Ingredients for Spinach Meatloaf Pie

1 lb. lean ground beef, crumbled
1 onion, chopped
1 clove garlic, minced
1/2 tsp. dried basil
1/4 tsp. dried marjoram
1/4 tsp. dried oregano
1 tsp. salt
1/4 tsp pepper
1 pkg. frozen chopped spinach, defrosted and drained
4 large eggs, beaten
1/4 cup shredded mozzarella cheese

Recipe Directions for Spinach Meatloaf Pie

  1. Crumble the beef into a 2-quart measure, add onion, garlic, basil, marjoram, oregano, salt, and pepper and microwave on HIGH 5 minutes or until beef is cooked.

  2. Stir in drained spinach and eggs. Cover and microwave on HIGH 2 to 3 minutes, stirring several times. Press mixture into buttered 10-inch pie plate, cover with wax paper, and microwave on 70% power 4 to 6 minutes, or until set. Sprinkle with cheese, if desired, and let stand 3 to 4 minutes before cutting.
