Recipe Ingredients for Spinach Manicotti

1 box Manicotti Dry
2 serving Extra Virgin Olive Oil
2 cloves, raw Garlic
6 oz Spinach
2 medium Egg, Whole
15 oz Ricotta, Part Skim Milk Cheese
26 1/2 oz Spaghetti Sauce Italian Sausage
1/2 cup Parmesan, Grated Cheese
5 oz Mushrooms Sliced

Recipe Directions for Spinach Manicotti

  1. Preheat oven to 350.

  2. Cook Manicotti 7 minutes

  3. In skillet, combine mushrooms and garlic. Stir in spinach. Saute about 5 minutes.

  4. Beats eggs. Add ricotta cheese, basil and salt, and 1/2 cup mozzerella cheese. Stir in mushroom mixture.

  5. Spread 3/4 cup spaghetti sauce on bottom of pan. Put filling in manicotti. Arrange filled manicotti in pan. Cover with remainder of sauce. Sprinkle with parmesan. Cover with foil. Bake 30 minutes. Uncover; bake 5-10 minutes more.
