Recipe Ingredients for Spinach Manicotti

2 cups part-skim mozzarella cheese, shredded
16 ounces lowfat cottage cheese
10 ounces spinach, frozen and chopped
2 ounces Romano cheese, grated
1 1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
11 1/2 ounces manicotti
26 ounces marinara sauce
8 ounces water

Recipe Directions for Spinach Manicotti

  1. Combine cottage cheese, 1 1/2 cups of the mozzarella cheese, 1 ounce of the Romano cheese, spinach (thawed, drained, and squeezed dry), oregano, salt, and pepper in a bowl. Stuff the manicotti shells with the mixture. Spray a 9 x 13" pan with cooking spray. Add half the jar of marinara sauce. Place manicotti on the sauce in the pan. Cover with the remaining sauce, 1 cup of water, and the rest of the cheese.

  2. Cover with foil and bake at 375 degrees for 45-55 minutes, until done. Let stand 5-10 minutes before serving.
