Recipe Ingredients for Spinach and Lentil Soup

2 1/2 tablespoons white rice
1/3 cup water
1/2 teaspoon olive oil
2 ounces turkey kielbasa, chopped
1/2 onion, minced
1/2 carrot, chopped
1/4 teaspoon crushed red pepper flakes
2 cups water
2 cup chicken broth
1/2 cup dry lentils
6 ounces frozen spinach
1/2 cup celery
1/2 teaspoon garlic
1/4 teaspoon cumin

Recipe Directions for Spinach and Lentil Soup

Heat the oil in a large pot over medium heat, and cook the turkey kielbasa until lightly browned. Mix in celery, onion, carrots and all other seasonings. Cook and stir until tender. Pour in the water, broth, rice and lentils. Bring to a boil, reduce heat to low, and simmer 25 minutes. Stir the spinach into the soup, and continue cooking 5 minutes before serving
