Recipe Ingredients for spinach and lentil soup

10 cups water
2 cups spinach
1 zucchini
1/2 onion
7 mushrooms
2 tsp ginger, grated
2 tsp olive oil
1 cup vegetable broth
1/2 tsp salt
1 1/2 cups lentils
1/4 cup lemon
1/2 tsp paprika
1/4 tsp cumin
1/4 tsp pepper

Recipe Directions for spinach and lentil soup

  1. Place lentils and water to boil on high. When boiling, reduce heat to med & cook 45 min.

  2. In a saucepan sautee onion, zucchini, and mushrooms w/ oil. Add spices & ginger. Add 2 cans low sodium V8. Simmer until saucy.

  3. Add sauce to lentils, when done. Add spinach. Boil additional 10 min. Add more lemon juice, if desired.
