Vegetarian soup - spicy as want it.

Recipe Ingredients for Spinach and Lentil Soup

1 cup carrots
1 large onion
1 tbspn olive oil
6 cups water
2 cups salsa
1 1/4 cups lentils
3/4 tsp salt
10 ounce spinach

Recipe Directions for Spinach and Lentil Soup

  1. Saute grated carrots and chopped onion in oil til tender. Add everything EXCEPT spinach. Bring to boil. Reduce heat, cover and simmer for 50 minutes. Stir in spinach and simmer for 5-10 minutes more.

  2. Instead of using salsa can use large tin diced tomatoes and 1-2 jalpeno peppers. Soup can be spiced up more by individuals by adding tabasco sauce once soup is served.
