Homemade Lentil soup- added spinach and celery for extra veggie servings!

Recipe Ingredients for Spinach Lentil and Rice Soup

2 tsp canola oil
2 large yellow onion, chopped
1 cup (entire box) of Kitchen Basics Vegan Low Sodium,
1 1/2 cup brown rice, parboiled
1 cup lentils
2 tsp pepper
12 grams balance salt
1 tbsp dried thyme
6 bay leaves
4 cup water
100 grams celery
60 grams spinach, coarsely chopped

Recipe Directions for Spinach Lentil and Rice Soup

  1. In a large pot, saute the onions in the vegetable oil for 3-5 minutes until onions turn clear.

  2. Add the vegetable broth, lentils, pepper, thyme, bay leaves and salt.

  3. Reduce heat to a simmer. Cover and cook until lentils are soft, about 45 minutes.

  4. Add Rice and celery 10 minutes till end

  5. Add Spinach 5 min till end

  6. Serve in ceramic bowls
