Tasty vegetarian lasagne. You can add other fave veggies to the tomato sauce e.g. aubergine, courgette.

Recipe Ingredients for Spinach & Lentil Lasagne (w/out cream)

3 tbsp olive oil
3 cloves garlic
500 g Dolmio Extra Garlic Pasta Sauce
250 g Dolmio Bolognese Pasta Sauce
150 g frozen spinach
237 g lentils, cooked, boxed
150 g butter
500 ml lowfat milk
80 g plain flour
200 g gouda cheese, grated
100 barilla lasagne
1 tsp salt
1/4 tsp ground black pepper
1/2 tbsp chopped parsley

Recipe Directions for Spinach & Lentil Lasagne (w/out cream)

  1. In a 3L pot, sauté garlic in olive oil. When golden add spinach and a pinch salt. Cooktill almost defrosted/wilted. Add lentils (canned/boxed is ok - they're abt 100cals/100g), pepper & parsley. Stir well, add pasta sauces and cook covered for 25mins.

  2. Remove from heat and prepare a white sauce with the butter, flour, milk and salt. Whisk whilst cooking to achieve creamed soup consistency. Remove from heat.

  3. Preheat oven 180C/350F. Not fan-forced.

  4. Layer tomato sauce then white sauce then pasta in a baking dish. Finish with grated cheese.

  5. Bake in oven for abt 1 hour. Remove and allow to cool/set a little before cutting into portions - it's too runny otherwise.
