Not quick, but easy and worth the effort. Excellent served with a tomato-basil salad and/or roasted asparagus. You can use vegetable stock instead of water if you wish.

Recipe Ingredients for Spinach Lasagne with Roasted Tomato and Wild Mushroom Sauce

4 pounds tomatoes, cut in half
1 large onion, quartered
2 tsp olive oil
5 cloves of garlic, minced (use more or less to taste)
1/2 pound porcini mushrooms, cleaned and sliced
1 cup water (or more as needed)
1/2 cup fresh basil, chopped
1/4 cup Italian parsley, chopped
15 oz nonfat ricotta cheese
1 egg
1 pound spinach, cleaned and chopped
4 oz mozzarella cheese (sliced fresh or grated dry)
8 oz pasta (lasagne noodles, cooked al dente)

Recipe Directions for Spinach Lasagne with Roasted Tomato and Wild Mushroom Sauce

  1. Sauce: Roast the tomatoes and the onions and puree.

  2. Saute the garlic in the olive oil. Add the mushrooms. Add small amounts of water (2-3 tablespoons) as needed to prevent burning. When the mushrooms are soft, add the puree. Also add the water or stock to thin the sauce. Use more liquid further thin the sauce if/as needed. Add salt and pepper to taste and let simmer for a minute or two. Then stir in the basil, cover, and turn off the heat.

  3. Filling: Stir together the egg, ricotta, and parsley. Add salt and pepper to taste. Stir in the (uncooked) spinach and mix thoroughly.

  4. Prepare the lasagne: ladle a small amount of sauce into a 13x9 inch pan. Use just enough to cover the bottom of the pan. This prevents the lasagne from sticking.

  5. Now, layer the fillings: noodles, spinach mixture, sauce, mozzarella. The final layer should be noodles topped with sauce and mozzarella.

  6. Bake at 350 for approximately 45 minutes or until the sauce is bubbly.
