Spinach lasagne - can be made with or without meat

Recipe Ingredients for Spinach Lasagne

1 lb lean ground beef
1/2 cup diced white onion
1/2 lb fresh mushrooms, thinly sliced
1 garlic clove, minced
2 1/2 oz olive oil
28 oz tomato, crushed (1 can Unico)
1/2 cup pepper, yellow or red, diced
1/2 cup white wine vinegar
1/4 tsp pepper
6 oz ricotta cheese
6 oz low-fat feta cheese
10 oz frozen chopped spinach, thawed and drained
1 egg, slightly beaten
1 tbsp fresh basil, chopped
1/4 tsp nutmeg
12 oz spinach pasta, spinach flavour lasagne noodles

Recipe Directions for Spinach Lasagne

  1. Boil lasagne in large pot boiling water with 1 tsp oil and a pinch of salt until tender. Drain, separate and set aside.

  2. Saute ground beef in 1-2 tsp oil until almost fully cooked; add onion, minced garlic and mushrooms. Saute until onion is tender.

  3. Ladle crushed tomato into beef mixture, but retaining as much of the tomato liquid as possible. Add white wine vinegar and simmer for at least 7 minutes.

  4. Saute yellow pepper in 1/2 tsp oil on med. heat for 2 minutes. Pour in reserved tomato liquid, a little more wine vinegar (if desired) and simmer on low for about 7 minutes.

  5. In medium size mixing bowl, combine spinach, feta and ricotta, egg, nutmeg and basil. Stir until well combined.

  6. In 9" x 13" x 2" baking dish, ladle 1/4 beef mixture and spread evenly. Top with 3 lasagne noodles. Spread 1/2 the spinach mixture on next layer, followed by 3 more noodles, then the remainder of the beef mixture, 3 more noodles, spinach mixture, 3 more noodles. Pour tomato sauce and yellow pepper over top. Garnish with a little more crumbled feta (if desired).

  7. Bake at 375 degrees F for about 20 minutes.
