Delicious and can be made with non-fat ricotta cheese, or cottage cheese to lower fat content per serving. Make the day ahead to let flavors meld.

Recipe Ingredients for Spinach Lasagna Rollups

475 g pc Lasagna Noodles
1 cup Ricotta, Part Skim Milk Cheese
1 cup Spinach
1 cup Diced Tomatoes, No Salt Added
8 tbsp Parmesan, Grated Cheese
1 tablespoon Oregano
1/2 g Thyme
1/2 cup Egg Beaters
1 tsp garlic, minced

Recipe Directions for Spinach Lasagna Rollups

  1. Cook lasagna noodles until al dente.

  2. Mix cheeses, Egg Beaters, and spinach. Put about 2 TBSP filling along a noodle and roll up. Place seam side down in baking dish. Bake at 350 for 30 minutes or until hot through. Cover with sauce and bake another 10 minutes. Serve.
