Versatile recipe that can be made as is or completely meatless. The variety is endless!!

Recipe Ingredients for Spinach Lasagna

5 lbs ground turkey
3 cup Fat Free Ricotta Cheese
2 eggs
12 sheet lasagna noodles
2 cloves,+raw Garlic
20 oz frozen spinach

Recipe Directions for Spinach Lasagna

  1. brown the ground turkey with the garlic cloves (chopped), drain and set aside.

  2. in a mixing bowl, break the eggs and beat. Add the ricotta cheese; salt and pepper to taste.

  3. add the spinach to the cheese mixture. Add in a good handful of chopped parsley, two pinches of cinnamon or nutmeg, one pinch of dried/ground mustard. Mix to combine.

  4. Line the bottom of the baking pan with a small amount of the cheese mixture- then layer the noodles atop. Add a layer of meat, a layer of cheese, then a layer of noodles. repeat as desired/needed.

  5. Bake at 350 degrees until bubbly.

  6. *I finish the top with 1/2 cup of mozzarella cheese but did not include it in the recipe as it is completely optional. If you do add, sprinkle the cheese on top the lasagna before you are ready to pull it out of the oven- keep it in until the cheese becomes slightly brown and melted.

  7. * If you are doing meatless, exclude the turkey and increase the ricotta and egg mixture.

  8. *For my brothers (who are football players in college), I will add an Alfredo sauce in between each layer. they can get away with the extra calories!
