Spinach, pine nuts, feta, pesto lasagna

Recipe Ingredients for Spinach Lasagna

4 cups crushed tomatoes
8 oz sliced mushrooms
1 onion
2 tbsp olive oil
1 can tomato paste
8 clove garlic
1 tsp thyme
1 tsp oregano
1/2 cup red wine
1 lb Sargento Light Ricotta Cheese
3 oz pesto
1/2 lb mozzarella cheese
10 oz spinach
3 oz feta cheese
2 oz pine nuts
1/2 tsp nutmeg
4 oz parmesan cheese
6 oz lasagna noodles

Recipe Directions for Spinach Lasagna

  1. Saute onions, garlic, mushrooms in olive oil. Add tomatoes, tomato paste thyme, oregano, red wine and simmer.

  2. Combine ricotta, feta, roasted pine nuts, nutmeg, and drained spinach in food processor

  3. Assemble 2 layers of sauce, noodles, ricotta mixture, shredded mozzarella. Finish with sauce and parmesan.

  4. Cook for 45 min in 350 degree oven until bubbling.
